Spicy Tuna Rolls

Lunch menus can be so much more than white bread sandwiches! My Spicy Tuna Rolls take no more than 10 minutes to put together, even less with more hands. It is also a perfect recipe for children to get their hands dirty and help roll the little parcels.

This particular recipe can be a little bit spicy but its really up to you how much chilli you put into your roll and what other ingredients you add to help the balance the spicy flavours.

This recipe is: Gluten free, Dairy free, Paleo, Vegetarian, Grain free

Ingredients

1 large can of ethical and sustainable tuna –
2 tablespoons organic harissa paste
1 whole ripe avocado
red cabbage slicees
baby spinach leaves
spiral nori sheets

optional: Cashew cheese, Sheep/goats feta, tahini, pepita spread, kim chi – anything else really! they are so versatile!

Method

1. In a small bowl, mix the 1/2 the harissa paste and the tuna together with a pinch of salt and pepper. Taste your mixture here, add more if you would like it spicier.
2. On a clean bench lay out a single nori sheet, ensuring its the right side down (each brand should have the instructions on the packet)
3. Starting with the Avocado, stack your fillings up onto the Nori sheet, finishing with the tuna on top.
4. Wetting your fingers with warm filtered water, gently wet the parameter of the Nori sheet to help stick the roll together.

Enjoy straight away or wrap in brown parchment paper to take with you to school and work
