Ok, so I know how simple this salad it but man, it was delicious and I think every one of my clients knows just how much I adore rocket for its digestive bitter support – making this recipe a win! With all my recipes, I want to use the inspiration as a base and from there, you build in your favourite foods. I also think it’s important to remember that health and healthy recipes isnt thousands of ingredients and complex recipes – its simple wholefood food that nourishes.
I have rocket growing in our garden, so this was picked and eaten all within 15 minutes, which was very cute for our kids to see – even if they did find the salad a bit too spicy.
Rocket has a bitter taste profile, when eaten before a meal it helps to increase the digestive capacity while also enhancing blood glucose metabolism for the meal that follows.
I N G R E D I E N T S
fresh rocket – approx 400g
50g sheep feta (or your choice of feta)
2 shallots
1 ripe avocado
100g almonds
1 tsp honey
chili flakes + salt to season
D R E S S I N G
1 tsp honey roasted mustard (or normal wholegrain mustard)
juice from 1/2 lemon
1 tbsp olive oil
salt
Other ingredients that would have been delicious to add in; pear, chickpeas, nashi pear, chili, roasted chicken, swap the feta for halloumi
M E T H O D
- In a small pan dry roast the almonds. Once cooked remove from the heat and add the honey, chili and salt. Remove and set aside to cool.
- Assemble the salad
- Assemble the dressing
- Mix everything together and sprinkle over the honey almonds for extra crunch
Serve with your choice of protein – we had it with fish which was delicious but you could have it along side most proteins of choice.
