2 Minute Cucumber Salad

If you are a client of mine, you know about my love affair with Asian flavours in my cooking! and this salad is no different. Its super easy to make, gluten free, dairy free and a great way to sneak a veggie into your plate with minimal effort. It would also work great for work lunches!

We often serve this type of salad with home-marinated BBQ chicken, rissoles or fish, but really it can be alongside a lot of different meals. Another easy recipe that would pair well would be our Chicken Meatballs

This recipe is Gluten free, Dairy free, Raw, Vegan

I N G R E D I E N T S

3 Lebanese cucumbers
2 shallots, cleaned and thinly sliced.
2 tbsp roasted sesame seeds, or raw that have been lightly toasted in a dry pan
2 tbsp rice wine vinegar
1 tbsp roasted sesame oil
1 tbsp tamari
1 garlic clove crushed/grated
a pinch of salt
chili flakes to your preference

M E T H O D

  1. Before slicing your cucumbers, use a fork to scrape along the sides of the cucumbers. This is to help the dressing get into the cucumbers.
  2. Slice your cucumbers very thinly; you can also use a mandolin if you have one, but a knife works just as well and requires less cleanup.
  3. Place them into a mixing bowl and top with the remaining ingredients. I like to add a little chili, mix and taste and add more if needed.
  4. Mix well and enjoy.

* for kids, I take out some of the salad before adding the chili so they can enjoy some too.
