Baked Bircher Bars 

Road trips, I love them! To me, there is nothing better than setting off, exploring back roads and little towns. Finding the local only markets and tiny bakeries that make the best sourdough olive loaf and enjoying it picnic style with shoeless feet and sun-kissed shoulders. When we think of road trip snacks, it is often chips and lollies that make it into the front seat, however, these bars are delicious and help to keep you full in between pit stops and bush walks.

This recipe is nut free so they are perfect for school lunchboxes!

This recipe is Wheat free, Dairy free, High fibre, Protein rich, Vegan, Nut free and Refined sugar free

I N G R E D I E N T S 

2 cups of whole organic oats
1.5 cups of water
2 tbsp chia seeds
1 cup of mixed seeds (I used pumpkin seeds, sunflower seeds and sesame seeds)
1 ripe orange – juice and 1 teaspoon rind
2 tablespoon of melted coconut oil
1 tablespoon maple syrup
1/2 teaspoon cinnamon powder
Pinch of sea salt

M E T H O D 

1. In a mixing bowl add the oats, nuts, seeds, salt, and cinnamon. Use your hands to mix well.

2. Add in the maple syrup, coconut oil, orange rind and juice from the orange and water. Mix well and set aside for 20-30 minutes to set.

3. Place mixture into a lined baking tin and place into a preheated oven 170 degrees. Bake for 40 minutes until cooked through.

Note: we prefer the bars not too sweet..but if you have a sweet tooth you can add an extra bit of maple syrup.
