Summer in Europe, where people stroll the streets enjoying an ice cream and the late sunsets…I’m there too but I’m holding a giant bag of sweet tomatoes for 2€ dreaming of what wonderful creation I can make in the back of a van with a chopping board and knife.
In all my recipes I love to let the ingredients speak for themselves, and this recipe is no different. I guess wouldn’t really call it a recipe, rather a collection of perfectly paired ingredients that allow of the flavours to explode in your mouth – what ever you call it, it is one delicious salad!
This Recipe is Raw, Vegan, Gluten free, Dairy free, Paleo, Grain free, Seasonal and Sensational
I N G R E D I E N T S
500g of your choice of tomatoes, try and use what’s in season
¼ red onion, thinly sliced
1 generous splash of quality olive oil
¼ teaspoon organic dried oregano
Season with sea salt
M E T H O D
1. Roughly chop the tomatoes and add to your salad bowl.
2. Add in remaining ingredients and using your hands mix well.
3. Serve straight away as is or with seriously delicious crusty bread (unless your gluten free like me and a rice cracker simply won’t cut it and it’s better straight)
