Hello from the sunny fields of Scotland! We are now up to the UK leg of our road trip and I have fallen in love with the wild fruits and countryside! Poor Rob has to stop the car on nearly every corner so I can do a little wild picking and an afternoon stroll is now an afternoon forage … But how can you not when there are rows and rows of wild blackberry bushes…and let’s be honest I’m sure the sun and berries won’t be around for too long!
With my tall right-hand man reaching the top of the bushes and me picking the middle we had several handfuls within minutes…so much so that I had to be reminded that we could come back later with a bucket and get more.
This recipe is Vegan, Raw, Gluten free, Grain free, Dairy free, Paleo and Wholefood
R E C I P E
1 cup of wild picked blackberries
1 cup of milk of choice (I used coconut)
1 handful of ice
1/2 teaspoon of rice malt or honey
1 tablespoon coconut (dairy-free) yoghurt
M E T H O D
1. Add all the ingredients (except the coconut yoghurt) into a blender and process until smooth. Add more milk if needed. Pour into a glass and add yoghurt.
2. Use a spoon to swirl the yoghurt around the glass and enjoy!
