Spring has finally arrived in London, and it is spectacular! Full colour wheels of flowers blooming in the gardens and streets, green lush grass covering the parks and people rushing out of work to get a glimpse of the sunshine and warm air. This beautiful weather was the inspiration for this recipe… that the rather amazing range of delicious fresh fruit on offer!
I am sure you noticed by now, I love chia seeds! These tiny seeds have so much nutritional power and in my opinion should be a staple in every pantry. I am just finding out that ‘health foods’ are so much more expensive in the UK than back home in Sydney (and that is without the currency difference!) but if you search and search you are able to find some bargains…I highly recommend looking in the specialty stores, I found chia seeds at an amazing price in a Polish store and Quinoa in a Greek Store! Anyway back to Chia seeds…
Chia seeds have an impressive health profile, rich in protein, fibre, Omega 3 fatty acids there is little not to love about Chia seeds. You are able to cook with them, bake with them, create raw treats and bites as well as pop them in your water bottle for an extra nutrient boost… you can enjoy them without an oven, fire or stove (which is what I will be doing for the next couple of months as we travel around Europe!) so win, win, WIN!
This recipe is Vegan, Raw, Gluten free, Wheat free Dairy free, Refined Sugar free, Paleo, Wholefood, High protein, High Fibre and AMAZING
INGREDIENTS
1/4 cup chia seeds
1 cup of beetroot juice
1/4 of your homemade or favourite granola
fresh seasonal fruit
1 tablespoon coconut yoghurt
METHOD
1. The night before: add the chia seeds and beetroot juice into a mixing bowl. Mix well and set aside overnight to thicken.
2. In the morning: Place the chia seed pudding into a serving bowl and top with fresh seasonal fruit, your choice of granola and a dollop of fresh coconut yoghurt.
3. Enjoy straight away or pop into a glass jar and enjoy for a light meal.
