Ingredients:
1.5 cups of cooked quinoa
2 small sweet potatoes roasted
1/2 red onion diced
1 large bunch of parsley, I used a combination of flat leaf and curly parsley
a small handful of fresh mint
2 tbsp chia seeds
2 tbsp sunflower seeds
2 cups cooked chickpeas or one can of BPA free organic chickpeas
handful of cherry tomatoes
1/4 red cabbage finely sliced
Dressing:
1 roasted garlic clove, chopped
1 tbsp organic wholegrain mustard (choose low/no sugar option)
juice from one lemon
2 tbsp olive oil or untoasted sesame oil
Method:
1. place all ingredients in a large salad bowl and top with salad dressing.
2. Enjoy straight away or for lunch the next day
