I Love whipping up healthy snacks for my friends and family. One treat that frequently ends up on my kitchen bench are these delicious gluten free almond meal cookies. This recipe only takes about 5 minutes to prep and 15-20 minutes to cook. What I love most about this recipe is that the whole family can get involved; I highly recommend doubling the recipe as they disappear very quickly
Recipe is: gluten free, grain free, dairy free, vegan (if replacing egg), sugar free
Ingredients:
1 ½ cups almond meal
¾ cup chipped coconut
2 tbsp of chia seeds
½ tsp baking powder
a pinch of sea salt (I use pink Himalayan salt)
1 egg (or one chia egg)
1 pinch of cinnamon
3 tablespoons of melted coconut oil (olive oil or macadamia oil)
optional: raw, vegan sugar free chocolate chopped roughly
Method:
1. Pre heat the oven to 180 Degrees Celsius
2. In a large bowl use your hands to combine all ingredients
3. Roll into golf sized balls and flatten with your hands
4. Place on to a lined baking tray
5. Bake until golden and brown, these cookies will be moist and chewy
I’m not too sure how long these yummy cookies will last, mainly because mine all disappear within a day or two
