We are all about simple recipes that pack a SERIOUS health punch.. and pesto is one of those recipes. easy to make and you can add in different foods to boost its phytonutrient content. For women, we want to be boosting greens for hormonal and gut health, but we also want food to taste delicious so that we experience the joy, makes food enjoyable and delicious! this recipe hits all of those areas – and even better our kids loved it too!
if you have the time and a mortar and pestle, then absolutely you can do this the proper way, but if you don’t have time – this is your new best friend.
I N G R E D I E N T S
1 large bunch of basil
1/2 cup kale
2 tbsp savoury yeast flakes or 1/4 cup grated parmesan cheese
2 tbsp pumpkin seeds
2 or 3 large garlic cloves
salt to taste
2-4 tablespoons of olive oil
M E T H O D
1. add all the ingredients, except for the olive oil, to a food processor.
2. process until finely chopped.
3. remove from the food processor, and place into a glass jar or container.
4. pour over the olive oil. lightly stir the oil through to cover.
HOW TO USE:
store in the fridge and add to everything! salads, eggs, avocado toast, use as a dip or as a flavour booster for the meal. serve it with veggie sticks.
