Some mornings we just need a quick and easy breakfast, and for the kids to actually eat it! This recipe is my go to, usually I batch cook and freeze them so I can pull them out any time the kids need a fast meal to quiet the angry tummies, or even use them as a snack. just pop them into the toaster to warm them back up!
They could not be more simple, add all the ingredients into a blender and cook in a pan. it’s no surprise that I like veggies at every meal, so this is a easy way to tick that off your to-do list too!
If your kids arent into dinos, you can leave out the spinach and add in beetroot powder and turn them pink! fresh blueberries or blackberries will turn them purple
INGREDIENTS
2 eggs
1 ripe banana
1-2 large handfuls baby spinach OR 2 pucks of frozen spinach thrown straight in
2 servings of vanilla protein powder, either WPI or plant-based if you require dairy free.
1/2 cup buckwheat flour
1/4 cup almond meal
1/2 tsp cinnamon
additional extras: chia seeds, hemp seeds, LSA, collagen powder for extra protein
METHOD
1. place all ingredients into a blender
2. cook them in a small pan with a small bit of butter / ghee / coconut oil
enjoy straight away or pack them into a glass container to have out on a stroll like Huxley did this morning
