Teff… I know what you are thinking… what is Teff?
We have another superfood! Teff is tiny tiny gluten-free seed – about the size of a poppy seed or half a sesame seed. Teff has been found to have a delicious dose of calcium, iron, dietary fibre and vitamin C. its mild nutty flavour and texture makes it perfect for a wide variety of meals!
For my first cooking experience with Teff I wanted something quick and easy that really showcased the grain for what it was .. and whats better than porridge on a sunny winters morning!
I N G R E D I E N T S
1/4 cup organic teff whole grain
1/2 cup water
1/4 cup nut milk
pinch of cinnamon
1 teaspoon raw honey (optional)
O P T I O N A L T O P P I N G S
handful of crushed almonds
bee pollen
goji berries
inca berries
linseeds
sunflower seeds
pepita seeds/pumpkin seeds
M E T H O D
1. In a very small pan, add the Teff – continue to stiff the Teff it will slightly roast and pop when warm.
2. Add the remaining ingredients and continue to stir/whisk.
3. Continue to stir/whisk for 5 or so minutes until the consistency of polenta.
4. Remove from the pan and top with seasonal fruit, nuts and seeds
