When I first started studying to be a Naturopath, I can honestly say I was a little addicted to raw desserts – But let’s be honest, lots of cashews in the shape of a cake, whats not to love?! Raw desserts are often perceived as healthy, but the key is frequency and quantity with this delicious dessert. These days I tend to slow down on the raw desserts, but that doesn’t make them any less delicious or nutrient dense, so lets cheesecake!
INGREDIENTS
BASE
1 cup raw activated almonds
1/4 cup sunflower seeds
1 tbsp unhulled tahini
1 tbsp pure maple syrup
3 tbsp coconut oil
FILLING:
1 cup of cashews, soaked overnight
2 tbsp sunflower seeds, soaked overnight
1 tbsp maple syrup
1 cup coconut cream
1/2 cup of blackberries (blended and preferably seeds removed with fine sieve)
A pinch of sea salt
METHOD:
1. Place all the base ingredients into the food processor and pulse until a rough crumb. Push base into the tart tin and pop into the freezer.
2. Place remaining ingredients into the food processor and process until smooth.
3. Remove base from freezer and fill the remaining tart tin with superfood mixture.
4. place in the fridge for at least 2 hours and enjoy topped with fresh berries
