What I love the most about these bombs, is how perfect they are for little fingers to roll! Growing up, my Mum and Nonna’s would always be in the kitchen. My little sister and I would be right there with them; rolling meat balls, slicing and peeling. It is here, that I believe my love for food was born.
This Recipe is: Gluten free, Dairy free, Vegan, Paleo, High fibre, Refined sugar free, Grain free, Sugar free
Ingredients
FILLING
2 cups of desiccated coconut
1/2 cup coconut milk
2 tbsp honey/ rice malt/ maple syrup
3 tbsp coconut oil
a pinch of salt
a pinch of vanilla powder
CHOC COATING
1/2 cup raw cacao powder
1/2 cup melted coconut oil
2 tbsp honey/rice malt/maple syrup
pinch of salt
pinch of cinnamon
Method
1. In a medium sized mixing bowl, add in all the ingredients for the filling. Using your hands, mix well and have a little taste. I only used 2 tbsp maple syrup and found it to be quite sweet. Once happy with the taste, pop it into the fridge for at least 20-30 mins
2. Remove filling from the fridge, using your hands, roll into equal sized balls and place onto a baking tray. Once tray is full, pop into the freezer.
3. In a small saucepan, heat ingredients for chocolate coating: first with coconut oil, sweetener, salt and cinnamon and then cacao. Once smooth, remove from heat.
4. Remove coconut filling from freezer and one by one dip into the chocolate coating. Placing the bombs back on the baking tray.
5. Once all covered, place into the fridge to chill and enjoy x
