I LOVE Kombucha, well I love anything fermented but Kombucha would have to be top of the list. All you need to make the Kombucha is filtered water, organic black tea, sugar and a SCOBY.
Your SCOBY (AKA Symbiotic Colony Of Bacteria and Yeast) is what turns your tea to Kombucha! They can be a little bit hard to find, but the way I started mine was to ask around – there are facebook pages and forums where people happily swap and share fermented foods. What I also love about the magic of Kombucha is you should not pay for a SCOBY they should be shared and loved between friends and family.
This recipe is: Gluten free, Dairy free, Vegan, Raw, Paleo, Grain free, Fermented
Ingredients:
1 L of home brewed Kombucha
1 cucumber, washed and thinly sliced long ways
1/4 lemon thinly sliced
rough handful of fresh mint leaves
squeeze of fresh lemon juice
ice to serve
Method:
1. In a large pitcher, muddle all the lemon, mint and cucumber.
2. Add in the ice and then your magical Kombucha
Enjoy straight away 🙂 I like mine alcohol free, but you can add a splash of gin or vodka
